Carrot And Sweet Potato Soup
Ingredients:
A glug of olive oil / 1 tbsp coconut oil
1 large red onion
2cm piece of ginger
3 large carrots
2 sweet potatoes
1 litre vegetable stock (Bouillon powder / kallo organic stock cube)
2 tsp ground coriander
sprinkle of dried italian herbs
1 tsp ground cumin
2 garlic cloves
himalayan pink salt / Organic sea salt & ground black pepper
Method:
1. Roughly chop the onion and peel and roughly chop the carrots and sweet potatoes. Then add your oil to a big stockpot and sweat the onions.
2. Add the ginger and cook for another 30 seconds.
3. Throw in the carrots and sweet potatoes and cook for another 1 - 2 minutes.
4. Add your stock and bring to the boil. Once it's boiling add the coriander, herbs and ground cumin and season with salt and pepper. Simmer the stock for 20 minutes or until the carrots and potato are tender.
5. Turn off the heat, add your soup to the blender and puree until smooth.
6. Return to the pot and turn on a low heat. Stir in your crushed garlic and simmer for 1 to 2 minutes.
7. Serve in a big bowl with homemade brown soda bread with a good layering of butter in one of the following settings;
a) A cold winter evening with the fire on.
b) After a long hard day at work
c) After a freezing cold swim in the Atlantic Ocean
d) Custom setting
